Chef Amato Acacia restaurant

Chef Giovanni Amato

The 34-year old chef from Naples has been trained by some of the most renowned names in the world of cooking. It all started back in Italy, on the Amalfi Coast.

From then on, it’s a long list of Chefs who have worked with and trained the new chef of Château de la Messardière. Amongst them, Joël Robuchon in his restaurant at the Metropole Monte Carle.

Then, he continued exploring new cuisines and styles. First, at La Table d’Elsa, side by side with Chefl Paolo Sari. Then, from Monaco to Saint Tropez, Chef Giovanni AMATO offered his own version of Italian cuisine at the Dolceva in Saint Tropez.

Attracted by the snowy summits, Chef AMATO leaves behind the sunny beaches of the Gulf. He continues his exploration of cuisine in Gstaad. Then, he cooked at the K2 Palace and the Cheval Blanc in Courchevel. Last season, he served at the Palace des Airelles, table of Chef Pierre Gagnaire, with whom he worked in London, at the restaurant le Sketch.

Dedicated to the true nature of the products, Chef Giovanni AMATO, has a passion for food and the work of the producers. As the new Chef of the Château’s kitchens, he offers a modern and refined cuisine.

His menus alternate the great classics of French cuisine with Mediterranean creations bursting with flavors and colors. Based on the essential values of the French tradition, with noble and gourmet products, you are invited to all the pleasures of the table.
